Encantar works exactly like gustar — Encantar means to love/really like and follows the same structure as gustar: the thing loved is the grammatical subject, and the person who loves it is the indirect object. Me encanta la música (lit. Music enchants me). Me encantan los gatos — plural subject → plural verb.

Encanta vs encantan — The verb agrees with the subject (the thing loved), not with the person: Me encanta el libro (singular — one book). Me encantan los libros (plural — multiple books). Me encanta bailar (infinitive is always treated as singular). The IOP (me, te, le, nos, os, les) signals who is doing the loving.

Other encantar-type verbs — Many Spanish verbs follow the same reverse structure: molestar (to bother), fascinar (to fascinate), interesar (to interest), aburrir (to bore), doler (to hurt), faltar (to be lacking), quedar (to remain/to suit). All take an IOP and agree with their subject.
